Healthy Blueberry Muffins 

Gluten-Free, Sugar-Free and like all the things in this section; guilt-free 

 

So I'm still on my detox. This is my second time so I'm taking it as strict as before. I'm just trying to eat healthy and get back to basics. Hence, these healthy blueberry muffins. In past posts I've explained my constant battle with healthy eating: sugar cravings. I've studied and read about the downsides and terrible effects of our current society's obsession with sugar. And even though I know that studies show how the brain reacts with sugar, (which is similar to cocaine btw) I just can't help to crave something sweet after a meal! 

Therefore, since last year, I've been on a quest for healthy and sweet treats that'll soothe my soul! My sweet soul! ha! Anyway, these muffins are just delicious. I mostly go for raw desserts which are goey and yummy (Like this Key Lime Pie to die for!) but baked goods are always on my mind!! The sweetness of these muffins come from the taste of healthy and delicious dates!

Ingredients: 

- 1 cup brown rice flour

-1/2 teaspoon baking soda

-1 teaspoon baking powder 

-1/4 teaspoon pink salt

- 7 or 8 dates pitted and soaked for 10 minutes

- 1/2 cup almond milk 

- 1 1/2 flax seeds coarsely ground.

-1 tablespoon lime juice

I did my own apple sauce from scratch by boiling water with 1 cinnamon stick and 1 tablespoon coconut sugar and 1 red apple peeled and cored then processed

- 2 teaspoons lemon zest 

-1/3 cup applesauce 

-1 teaspoon vanilla extract 

-1/2 cup blueberries (i used frozen) 

-1/4 cup almonds 

 

 

If using thawed blueberries, be careful while mixing.

First pre heat oven at 400F and prepare your baking sheet with muffin cups. 

Then pulse your dates until finely chopped. Then add your apple sauce. You must be left with a creamy mixture. 

On a big bowl, mix wet ingredients; mixture of dates, almond milk, lemon juice, lemon zest and vanilla extract. DO NOT SKIP THE LEMON JUICE/ZEST! Now add the flax seed to the mixture and set aside. 

Now mix the rest of the ingredients; brown rice flour, baking soda, baking powder, and salt. Add these to the wet mixture and combine well. Now add the blueberries and almonds until everything is well incorporated. 

Separate with a spoon and place the mixture on your muffin cups. 

Place the muffins on the oven and bake for 25 mins approximately or until a toothpick comes out clean. 

Once ready, let them cool completely. I mean it. Give them a couple of hours before eating. If you like them warm, let them cool and then warm them. They are absolutely delicious! Bon appetit!
