Cinnamon Rolls

'cause dinner doesn't end until these come out of the oven

So, this a recipe I used for thanksgiving dinner. It's called "The World's Easiest Cinnamon Rolls" and it turns out, they are. Most recipes call for much more time or ingredients, even certain skills. But what do we say to complicated recipes!? NOT TODAY. So here it goes.

Prep time: 30-40 mins 

Sitting time: 1- 1:30 hours 

Ingredients:

-2 1/4 teaspoons dry active yeast

-1 cup of almond milk

-1/2 cup of butter (The recipe calls for vegan butter, but i couldn't find any here in Mexico, so I used regular) 

-1/4 teaspoon salt 

-3 cups all-purpose flour

-1/2 tablespoon cinnamon 

-1/4 cup sugar + 1 tbsp divided 


Warm milk with the butter until it melts. It should never boil. Let cool until you can touch the milk and not feel any change of temperature. Transfer to a mixing bowl and sprinkle yeast. Let it sit for 10 minutes. Add 1 tbsp of sugar and salt and stir. *The recipe calls for kneading but I used my stand mixer for this. 

Add 1/2 cup at a time the flour and mix for no more than 1 minute or until you get a loose ball. Transfer for a oil coated bowl and cover with plastic wrap for 1 hour or until doubled the size. 

When ready, melt your butter. On a floured surface, roll out the dough and cut into a rectangle. Brush your dough with the melted butter and top with sugar and cinnamon. Roll into a tube and then cut into 2 inch circles. I used a serrated knife but you can also use unscented floss. (They say it's easier). Place the rolls on buttered oven pan (The recipe called for a squared pan but I used a round pan and worked perfectly) with the same amount of separation between each roll. Brush with more butter on top. 

Preheat oven at 350F (175C) and let sit the rolls until the oven is ready. (25-30 mins) 

Now, here's the detail. These cinnny rolls are best right out of the oven, so I recommend you save them until 20 mins before dessert time. Bake for 25 mins or until golden. The chef at the party was in charge of doing the frosting with Powdered Sugar and Orange Juice, but here's a dairy free cream cheese recipe you can use (http://minimalistbaker.com/gluten-free-zucchini-cake/).
