Delicious Alfajores For Christmas
Or any other occasion really...
-250 gr of butter (soft)
-150 gr of sugar
-3 egg yolks
-200 gr of all purpose flour
-300 gr of cornstarch
-2 teaspoons baking powder
-1 teapoon vanilla extract
-400 gr of Dulce de Leche
Mix the butter with the sugar until you get a creamy texture. Add the egg yolks one by one and keep mixing. Add the vanilla extract and keep mixing well.
Pre heat oven at 180C
On a different bowl, mix the flour, cornstarch and baking powder. Now sieve altogether and incorporate into your butter mixture. Once everything is together, knead by hand until you get a smooth dough.
Spread the dough with a rolling pin and leave a thickness of .5 cm. Cut with a cookie cutter into medium circles. Spread some flour on a baking sheet and place your cookies.
Bake the cookies alfajores for 5 -7 minutes. They are supposed to be soft, DO NOT OVERCOOK.
After they have cooled down, spread two sides with the Dulce de Leche and ensemble the cookies.
Sprinkle the sides with shredded coconut and the tops with icing sugar.
The best alfajores ever!! In less than 1 hour!!!
